Quinoa Tabbouleh Salad



  • 2 cups cooked Happy Karma quinoa
  • 1 cup chopped tomatoes
  • 1 cup chopped cucumbers
  • 1 cup chopped parsley
  • 2 tablespoons chopped fresh mint
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt + Pepper to taste chili salt if you can find it*



  1. Add Happy Karma Quinoa, tomatoes, cucumbers and fresh herbs into a large bowl.
  2. In a separate bowl, whisk together oil, lemon, salt and pepper. Pour dressing over salad ingredients and toss to combine.
