Ingredients:
- 2 cups cooked Happy Karma quinoa
- 1 cup chopped tomatoes
- 1 cup chopped cucumbers
- 1 cup chopped parsley
- 2 tablespoons chopped fresh mint
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt + Pepper to taste chili salt if you can find it*
Process:
- Add Happy Karma Quinoa, tomatoes, cucumbers and fresh herbs into a large bowl.
- In a separate bowl, whisk together oil, lemon, salt and pepper. Pour dressing over salad ingredients and toss to combine.
